Here is my delicious Sweet Butternut in coconut recipe, in Swahili we call it Matango ya nazi or Mayungu ya nazi depends where you come from?
Sweet butternut in coconut sauce
3/4 cup sugar
2 medium butternuts peeled and cut into cubes
130ml coconut cream
1 tspn vanilla extract
5 Cardamom cloves crashed
100g mixed dried fruits e.g mixed raisins, coconut flakes
In a pan over medium heat pour in the milk, sugar, butternut, vanilla, cardamom and half of the coconut cream. Bring to a boil and Let it cook on medium heat until the liquid is almost evaporated and butternut is soft, be checking it often since the milk sometimes could overflow while cooking on high heat you will need to be adjusting the temperatures to low at times, once the butternut is soft add in the remaining coconut cream and let it simmer for two minutes. Once ready let it cool and then serve warm or at room temperature with some mixed dried fruits on the side if you wish.
