Cassava and egg cutlets

Hi lovelies here is a fun way of using your #Cassava (Muhogo) feel free to share the recipe.. Let's make some Cassava and egg cutlets

1 kg Cassava (peeled)
6 boiled eggs
1 tablespoon minced chilli
1 teaspoon Ground Cumin
3 sticks spring onions
1 tablespoon butter
1/2 cup gram flour
1 cup all purpose flour
1 lime squeezed
salt to taste
oil for frying

Boil cassava then mash it compeletely, finely chop the spring onions mix with the mash, add in lime juice, chilli, cumin, butter and salt mix well and coat the mixture on each egg enusuring coverage all over the egg.In a separate bowl add some water about a cup with the gram flour and all purpose flour, add salt mix with a spatula until smooth like pan cake consistency then deep the cutlets in the mixture and deep over hot oil fry just like frying your Kachori. To serve you can either serve the way it is or cut in the centre to see the egg. Serve with your favorite chutney.
